Rombauer Napa/Sonoma Sauvignon Blanc 2022

Citrus Marinated Chilled Shrimp Avocado Stack: Chilled shrimp are marinated in a bright and zesty citrus blend, then elegantly layered with creamy avocado. This dish is a refreshing and flavorful introduction to the meal. The Sauvignon Blanc offers crisp acidity and vibrant notes of lemon, lime, and green apple, perfectly complementing the citrusy shrimp and creamy avocado.

Watermelon Salad: A simple yet refreshing watermelon salad, showcasing the natural sweetness and juiciness of ripe watermelon. The wine's fresh and fruity profile enhances the refreshing qualities of the watermelon, making this pairing a delightful palate cleanser.

2nd Course

Rombauer Carneros Chardonnay 2022

Pear Salad: This sophisticated salad features wine-poached pear slices, adding a hint of sweetness to the charred romaine spears. Creamy goat cheese, heirloom tomatoes, and candied walnuts add texture and flavor, all brought together with a tangy balsamic vinaigrette. The Chardonnay, with its rich and creamy texture, offers flavors of ripe pear, apple, and a hint of oak, beautifully balancing the sweetness of the pears and the tanginess of the vinaigrette.

3rd Course

Rombauer Napa Merlot 2019

Crispy Pork Belly: Succulent pork belly, cooked to a crispy perfection, is paired with a sweet and tangy blueberry gastrique, creating a delightful contrast. Roasted asparagus adds a touch of earthiness to this rich and savory dish. The Merlot, with its plush tannins and notes of plum, blackberry, and vanilla, complements the richness of the pork belly and the fruity notes of the blueberry gastrique, creating a harmonious pairing.

4th Course

Rombauer Cabernet 2019

Garlic and Rosemary Grilled Wagyu Tri-Tip: A luxurious Wagyu tri-tip, marinated with garlic and rosemary, is grilled to perfection. It is served with Potatoes Lyonnaise, featuring thinly sliced potatoes sautéed with onions, and a broiled Roma tomato, offering a classic and satisfying accompaniment. The Cabernet, with its bold structure and notes of dark cherry, cassis, and hints of tobacco, enhances the robust flavors of the grilled tri-tip and the savory potatoes, making for a rich and satisfying course.

5th Course

Rombauer California Zinfandel

Chocolate Decadence Torte: An indulgent and rich chocolate torte, served with a fresh raspberry coulis. The tartness of the raspberries perfectly balances the deep chocolate flavors, providing a decadent end to the meal. The Zinfandel, with its luscious notes of ripe berries, spice, and a hint of pepper, complements the intense chocolate and the fresh raspberry coulis, creating a luxurious and harmonious finale to the meal.
